Ancho Chile Salad Dressing

Ingredients:
2 Ancho chiles (1 smoked if possible)
1 clove garlic
½ cup olive oil
2 tbsp. white balsamic or apple cider vinegar
Handful of cilantro
4 tbsp. fresh orange juice
Salt & Pepper to taste

Preparation:
Remove stem and seeds from the dried chiles and soak in hot water until soft (15-20 minutes). Drain most of the water from the soaking chiles. Blend all ingredients except the oil in a blender until smooth. With the blender on low, slowly pour in the oil until blended.
