Ingredients:
½ cup onion, diced
1 clove garlic
1 tablespoon olive oil
2-3 chipoltes, minced
16 oz. tomatoes, whole or sauced
1 ½ cup chicken broth
Preparation:
Sauté onion, garlic and chipotle in oil until soft. Add remaining ingredients and simmer for 20 minutes. This works well as an enchilada sauce, salsa, or mix into a variety of sautees.
Makes 6 servings.
