Greens
Greens come in many shapes and forms, including lettuce, chard, collards, and all types of kale.
Kale and collards are part of the brassica family, which is high in beta carotene, vitamin C, calcium, iron and folate. Research has demonstrated that brassica vegetables have cancer fighting properties. All greens benefit us by providing roughage.
