Pimientos de Padrón

This Spanish tapa (small dish/appetizer) is becoming very popular in the United States. Pimentos de Padrón are very small chilies and make great tapas. Padróns are sautéed in olive oil. Generally, only 1 in 10 Padróns has heat, and you never know which one. It’s a culinary ‘russian roulette’’. It’s an interesting, tasty, and easy dish to make.

Ingredients:
2 tablespoons olive oil
12 pimientos de Padrón stems removed (removing stems is an option)
Sea or rock salt
ground black pepper

Preparation:
In a medium skillet, heat the olive oil. Add the chiles and fry. Stir well. Cook until they blister and start to turn dark in spots. Add salt and pepper to taste. Remove the chilies from the pan, drain on paper towels. They are ready to eat once they have cooled a bit.

Makes 2-4 servings.
