Quetzal Marinara Sauce

Ingredients:
8-10 medium dry-farmed ‘early girl’ tomatoes
1 sweet pepper
1 onion chopped
3 clove garlic chopped
2 tablespoons vegetable or olive oil
salt to taste

Preparation:
Chop tomatoes, or blend in food processor until smooth. Saute onion, garlic, and pepper in oil until tender. Combine all ingredients in pot, cook on medium heat, stirring well. Cook to desired consistency. Alternatively, you can use a crock pot. Cover & cook on low for about 6 hours.
